Autumn Equinox

Autumn is one of my favorite seasons. There is something magical about it. Maybe its the fact that the trees know that they must prepare to sleep, and so they give us a spectacular encore by changing color. Kind of like the finally at a fireworks show. Or maybe its the way in which mother nature supplies us with an abundance of foods which we are able to harvest and enjoy after a hot summer of toiling over crops. Note to self: must plant a vegetable garden so I can toil. Whatever it is, I thoroughly enjoy Autumn. To honor the Autumn equinox I wanted to make something special for dinner that said goodbye to summer and hello to Autumn. What I came up with was whole wheat penne pasta with spinach, Italian Tofurkey sausages, sun dried tomatoes in a basil tomato sauce. It looked amazing. My God Mother was joining us for dinner and noted that it even looked like fall. The red of the sauce and the crimson of the sun dried tomatoes really gave it the appearance of the leaves turning their majestic colors.
My husband isn't a big fan of tofu or anything that is a meat substitute. I thought I might try the sausage seeing as it does a good job of being un-tofu like. Despite my best efforts I was foiled again. 1-evil vegan food, 0-healthy protein option.
For desert I baked some apples with agave nectar and cherry granola. Unfortunately dinner was so late that we didn't have time to eat them. Have no fear apples, you will be eaten for breakfast!

Blackberries with oatmeal
Elderberry and echinacea tea
Veggie wrap, pasta salad and an oatmeal raisin cookie (yah me!!! I only ate one)
Granola bar
Whole wheat pasta with spinach, Italian Tofurkey Sausage, sun dried tomatoes in a basil tomato sauce
Green tea
